At every restaurant, there is one dish that is always comes highly recommended, and at SumoMaya in Scottsdale, this item is the guacamole. Here, you can find a traditional one made with queso fresco; however, the different versions such as Pomegranate, Calabacitas (sautéed squash), Seaweed, and King Crab are where the kitchen truly excels. For example, the King Crab Guacamole comes with butter-poached crab and a mango salsa that foretells of the delicate mélange of flavors still to come with the entrees, ceviche, and sushi rolls. Moreover, the selection of small bites includes simple items in which the ingredients shine all by themselves. From the kitchens of Peru, the Tiradito is a dish that prepares a sashimi-style seafood drenched in a spicy broth. It is similar to ceviche, but this one adds the sauce right before eating, as opposed to a cooking method used in ceviche.
